The famous chef from Portal del Echaurren restaurant (2 Michelin stars), has developed a new recipe with trout like the main ingredient. It is called “The river fish”. Roasted trout with it roes and pickles from Francis Paniego.
Tarama is a traditional greek and turkish plate. Taramasalata, taramosalata or tarama is defined as a fish roes salad, served as meze (appetizers selection). Echaurren restaurant chef has made his own versión to extol trout qualities, first marinated and after that shortly roasted.
